Description
Madras curry dishes can be either vegetarian or made with meat. Cooked medium-hot and full of intense tangy flavour. Its name is said to come from the south Indian city of Madras (now Chennai).
We have done all the hard work on your behalf, blending the spices and herbs to our own special recipe. As a result, you can easily cook this Lamb Madras curry dish at home. You will amaze your friends and family with the great flavour and aroma.
Our Lamb Madras is truly worth cooking, however, you can make this dish with a choice of meats.
10 minutes to prepare and 45 minutes to cook
Step-by-step preparation and cooking instructions:
Preparation
- Cut the lamb into bite size pieces
- Peel and finely chop the onions
- Finely chop the green chillies
- Peel and crush the garlic
- Peel and grate the ginger
Cooking Instructions
- Heat the oil in a large non-stick Pan. Add sachet 1 and sizzle for 2 mins.
- Add the chopped onions and fry until dark golden in colour.
- Then add the green chillies, garlic, and grated ginger, cook for 1 min.
- Add sachet 2 and the salt, cook stirring frequently for 3 mins.
- Add the meat and 50ml of hot water, mix well and cook for 20 mins.
- Tip in the chopped tomatoes and sachet 3, stir then cover and cook on a medium heat for a further 20 mins or until the meat is tender.
Additional ingredients required for this dish:
- 700g shoulder of lamb
- 2 large onions
- 4 garlic cloves
- 2.5 cm fresh ginger
- 3-4 green chillies
- 200g tinned chopped tomatoes
- fresh coriander leaves for garnishing
- 2 tsp salt
- 4-5 tbsp unflavoured cooking oil
Handy Tips
You can cook this curry the day before serving and refrigerate. Then, reheat until piping hot before serving
Leftovers can be frozen. To serve, defrost and then reheat until piping hot.

I am always wary of ordering lamb curries in restaurants in case the meat is not tender. This way I can cook it at home and it was better than most restaurants anyway.
I have been to India several times and enjoyed some wonderful meals and find most restaurants in the UK cook curries nowadays which all seem to taste as if they have come out of a jar. This meal, however, is very good and far more like the ones I have tasted in India.
The instructions are simple to follow, but I would use half the salt initially – you could always add more later.
