Description

Famed for its pungent cuisine, Thai food has a balance of spicy, sour, sweet and salty. The results of this Bhaji Man Thai Green Curry are no exception. This rich creamy dish is tempered with a balance of spices, fish and soy sauces, dark sugar, and citrus.

Our Thai Green Curry can be enjoyed with our fluffy pilau rice scattered with chopped coriander leaves or Thai holy basil.

20 minutes to prepare and 40 minutes to cook

Step-by-step preparation and cooking instructions:

Preparation

  • Peel onions and garlic.
  • Carefully top, tail, and de-seed the chillies. (for a hotter curry leave the seeds in)
  • Make the green curry paste: Quarter one onion and place with four garlic cloves, the de-seeded chillies, half teaspoon of salt, Sachet 1 and 5 tablespoons of cold water into a food processor. Blend to make a thick purée.
  • Prepare vegetables as necessary. Remove seeds and pith from red pepper. Cut all vegetables into one-inch sized pieces.
  • Cut chicken thighs into bite sized pieces.
  • Finely chop the remaining onion and garlic cloves.
  • Grate the zest of the lime and squeeze half for juice.
  • Bring chicken stock and coconut milk to a gentle simmer.

Cooking Instructions

  • Heat the oil in a medium-hot deep-frying pan and fry the onions until golden brown.
  • Add the garlic and fry for another minute.
  • Turn up the heat to high, add the green curry paste and fry for five minutes, stirring frequently.
  • Stir in the coconut milk, chicken stock, Sachet 2 and bring to a boil.
  • Fold in the vegetables (except green beans or sugar snaps if using), return to a simmer and cook for 5 minutes covered with the lid slightly ajar.
  • Add the chicken, return to a simmer, and cook covered for 10 minutes with lid slightly ajar.
  • Stir in the fish sauce, lime zest & juice, soy sauce, brown sugar, beans (or sugar snaps if using). Cook uncovered for 5 to 10 minutes over a low-medium heat until chicken is cooked and the vegetables are all tender and a thick gravy is created.
  • Taste and adjust the seasoning to suit.

Additional ingredients required for this dish:

  • 700g boneless skinless chicken thighs
  • 2 medium onions
  • 6 garlic cloves
  • 6 medium green chillies
  • 500g mixed vegetables (red pepper, aubergine plus your choice of green beans, button mushrooms, courgette, sugar snap peas)
  • 1 lime
  • 200ml chicken stock
  • 400ml coconut milk
  • 1 tbsp fish sauce
  • 1 tbsp light soy sauce
  • Heaped tbsp demerara sugar
  • 3 tbsp unflavoured cooking oil

You can cook this curry the day before serving and refrigerate. Then, reheat until piping hot before serving.

Leftovers can be frozen. To serve, defrost and then reheat until piping hot.
