Description

Vindaloo, is a standard cuisine of Goa with a Portuguese influence. It comes from the dish ‘carne de vinha d’alhos’ (meat marinated in wine and garlic). The wine was replaced with vinegar, then dried red chillies and spices added. The meat is then marinated in this mixture before cooking.

Goans serve vindaloo with pork, which is the original recipe. But this dish can be made with any meat of choice.

Now you can cook this great tasting dish at home using our curry spice kit. We provide a list of ingredients needed for this dish. Then, by following our preparation and cooking guide, you can make this mouth-watering dish at home. You will amaze your friends and family.

Step-by-step preparation and cooking instructions:

20 minutes to prepare and 60 minutes to cook

Preparation

  • Cut the pork into 2.5cm sized cubes
  • Peel and finely chop or grate the ginger
  • Peel the garlic cloves
  • Halve the onions and finely slice
  • Simmer 150ml water
  • Empty contents of sachet 1 into a pestle and mortar or coffee grinder and coarsely grind. Mix the ground spices, wine vinegar, salt and sugar together in a large bowl, add the cubed pork and fold until well coated. Leave to marinate for 30-40 minutes.
  • In a mini food processor, blend the ginger and garlic with two or three tablespoons of cold water until it becomes a smooth paste.

Cooking Instructions

  • Heat the oil in a medium-hot deep frying pan and add the sliced onions. Stir occasionally until golden brown and caramelised. If they start to burn, add a little more oil and lower the heat.
  • Add the ginger-garlic paste and fry, stirring well, for another minute.
  • Pour in the contents of sachet 2 and stir for a further minute.
  • Fold in the marinated pork and its juices; cook whilst stirring occasionally for 10 minutes.
  • Next carefully stir in 150ml of boiling water and bring to a good simmer. Cover pan with the lid slightly ajar, reduce heat to low and cook for 40 minutes, again stirring occasionally until the meat softens. If it starts to dry out, add a few tablespoons of boiling water.
  • Add contents of sachet 3 and cook for a further five minutes. By this point there should be thick gravy. If not, add sufficient boiling water to make this and finally check seasoning to suit your taste.

 

Additional ingredients required for this dish: Serves 4

  • 700g boneless trimmed pork shoulder
  • 2 medium onions
  • 2 garlic cloves
  • 5cm fresh ginger
  • 5 tbsp white wine vinegar
  • 1 tbsp light brown sugar
  • 2 tsp salt
  • 3 tbsp unflavoured cooking oil

Handy Tips

This meal can serve 6, just increase the meat to 1 kg and add a little more vinegar. All other ingredients remain the same as instructed on the packet.

You can cook this curry the day before serving and refrigerate. Then, reheat until piping hot before serving.

You can freeze any leftovers. Before serving, defrost and then reheat until piping hot

    After meeting The Bhaji Man himself at Colchester food and drink festival yesterday and sampling a tiny bit of this Vindaloo I had to buy it.

    I have always wanted to try an authentic Goan Vindaloo.

    I’ve just finished cooking my own and I can honestly say this is one of the best curries I’ve EVER had. Honestly.

    Nothing like the rubbish you would get from a curry house at all, this is a whole new level.

    I will definitely be back for more!

    This is one of our regular staples, along with the Lamb Rogan Josh. They are both so well balanced with flavour, and I really do agree with other reviewers that say that they are even better than the restaurants versions. I made this en masse for about a hundred people and not one of them had anything but praise for this, I should have made double the amount with the people that were coming back for more!
    If I find myself with only one box left I begin panicking!

    I was doubtful if I could create a Vindaloo that matched that of my local curry places. Wow !! I did it, well not exactly………… it was better, HONEST.
    The flavour has more to it, more depth, more honesty….coz it was done before my very eyes.
    Have used chicken also and the results are equally good.
