Description

Lamb Rogan Josh comes from Kashmir in Northern India. In this recipe extra spices get used, then tempered with yoghurt. Thanks to Bhaji Man’s Lamb Rogan Josh recipe, you can recreate this classic aromatic dish from the comfort of your own home.

When it comes to recipes that should be naturally gluten free, you can’t get much better than a curry. We have done all the hard work on your behalf perfecting the Lamb Rogan Josh. As a result, you can make this tasty and easy-to-make meal at home.

10 minutes to prepare and 60 minutes to cook

Step-by-step preparation and cooking instructions:

Preparation

  • Cut the lamb into 3cm cubes.
  • Peel and crush the garlic.
  • Quarter and finely slice the onions.
  • Peel and grate the root ginger.
  • Finely slice the fresh tomatoes (if using)
  • Roughly chop the coriander leaves.

Cooking Instructions

  • Place a large non-stick pan over a hot heat and add the oil.
  • When hot fry the lamb cubes in small batches over a medium heat until it turns brown. Remove lamb with a slotted spoon, and set aside.
  • In the same pan, fry the onions until golden brown.
  • Add the ginger and garlic and continue to stir for 1 minute.
  • Pour in the tomatoes and the contents of sachet 1, increasing the heat to hot and frying for 3 minutes.
  • Carefully put in the fried lamb cubes and any juices along with the contents of sachet 2. Stir well and cook over a medium heat for 10 minutes.
  • Stir in the contents of sachet 3, the tomato puree and salt, cooking for 5 minutes.
  • Add in 300ml of water, bring to a simmer and cover. Cook for around 40 minutes or until the lamb is tender, stirring occasionally to prevent sticking.
  • Finally add the yoghurt off the heat, mix well and place on low heat for two to three minutes.
  • Add lemon juice (optional) to suit and then adjust seasoning to taste.
  • Garnish with the coriander leaves before serving.

 

Additional ingredients required for this dish:

  • 700g boneless shoulder or neck fillet of lamb
  • 1 large onion
  • 3 garlic cloves
  • 5 cm fresh ginger
  • 4 medium tomatoes or 250g tinned chopped tomatoes
  • 1 tbsp tomato puree
  • handful coriander leaves
  • 100g natural full fat yoghurt
  • Fresh lemon juice (optional)
  • 2 tsp salt
  • 4 tbsp unflavoured cooking oil

Handy Tips

You can cook this curry the day before serving and refrigerate. Then, reheat until piping hot before serving.

Leftovers can be frozen. To serve, defrost and then reheat until piping hot.

    This pack is rated as medium and we are chilli cowards. That said, we absolutely loved this and shall order more very soon. Thank you Don for your recipes, everything we have tried so far has been really great and I’d recommend them all. The lamb was very tender, it was a cheap 1/2 shoulder from Tesco transformed by the spices, and everything tasted really fresh. We loved every mouthful.

    My other half cooked this for me. He doesn’t usually cook much – a brie and grape baguette has always been his piéce de résistance, but he said he was going to cook me a meal!

    I was a bit trepidatious but left him to it in the kitchen – every so often I peeked through the door – he was following the preparation instructions precisely, chopping and preparing – then there was a lt of sizzling and some wonderful smells wafting through the house – much sooner than I expected, and without any muttered or shouted expletives, a wonderful meal appeared on our dining table – it was absolutely delicious – much better than any I’ve had from a takeaway – and he even did the washing up.

    Since then he’s cooked several other Bhajiman Kits, each one as successful as the Rogan Josh, and I’ve just sat on the sofa with a glass of wine and put my feet up.

    My wife and I both adore Bhaji Man’s Lamb Rogan Josh recipe – especially as we can get perfect neck fillet of lamb from Witham butchers Holts or from A J Coulson’s (formerly Stokes) of 73 High St., Dunmow – not to say Tesco are not good value also!
    I used our last Rogan box on Monday and my wife wanted her share of the remainder next day while I decided to save my half up till Friday 17th Jan 2014!
    Meanwhile I ordered 6 more online plus enough Lamb Madras, Sri Lankan Prawn Curry, Pork Vindaloo and Batter/Onion Bhaji to qualify for a Bhaji Man Curry Club membership with a lifetime discount. I shall review the new recipes when I have had the chance to cook them.
    On top of which I had a phone call at home from the man himself (Don Lear) so interested in customer satisfaction that he wanted to to thank me for constructive comments on their website. We talked of curries and cricket and sons and family meals and agreed the world was no longer what we knew and loved. But there is still Bhaji Man.
    The result for our Lamb Rogan Josh was the best ever. Smooth but intensely spicy – and tender as a grandchild’s kiss.
    I was sceptical, even suspicious, that all the 5-star comments seemed to come from one customer … some name starting with bmusr—1….!
    Then I realised they were all slightly different! bmusrch—1 signed himself/herself ‘Chiles’ and it dawned on me that bmusr meant bhaji man user and the remaining letters were the individual, disguised identities.
    I expect I shall end up as bmusrda—1 lol!

    We’ve cooked with this kit a few times now – not only has it produced some really tasty (and I mean REALLY TASTY) food that the entire family can enjoy, the kit also gives you a much better appreciation of the finesse inherent in this kind of cooking. Not only is it producing great food, it’s also an education! Of all of the kits we have tried, this one remains a favourite!

    Not sure if I was going to like the lamb, not normally on my top likes list.
    However, very surprised how tender the meat was.
    Full of flavour, I have since experimented with adding extra spice (chilli) and it suits me.
    We cook and keep in the fridge overnight, we then freeze what we don’t need.
    It works a treat.
    This curry looks superb, the cooking smells are amazing and it tastes great.

    Cooked this a few days ago using neck of lamb. This is a fabulous tasting curry yet so fresh and clean! Not hot so flavours are rich and authentic without being too overpowering. This is definitely a favourite of ours; just about to order some more 🙂
